Yes, these bites are a simple, healthy alternative to those sugar-loaded granola bars that are so easy to grab on our way out the door. But beyond the ease, nutrients and protein, and convenience, there is a little bundle of decadent bliss. They are perfectly sweet, the slightest bit chewy and so filling! They truly are reminiscent of the taste of a peanut butter cup minus the creepy ingredients.
We love these around our home. I make a big batch on Sundays and they keep perfectly in the refrigerator all week long for quick snacks, breakfasts or sweet treats. I hope you like them!
No-Bake Peanut Butter Chocolate Bites
Notes: Be sure to use gluten free oats for a gluten free version. If you don’t have quick cook oats on hand, it is simple to create them with rolled or old fashioned oats. Place the rolled/old fashioned oats in a food processor and pulse them a couple of times until they are in smaller pieces. When shopping for peanut butter, always go for the brands that only have peanuts and salt for their ingredients. Many brands sneak in all sorts of sugars and additives.
1 Cup Quick Cook Oats
1/2 Cup Peanut Butter
1/2 Cup Almond Meal
1/4 Cup Honey
1-2 Ounces Dark Chocolate, chopped
Zap peanut butter in the microwave for 30 seconds. Place oats, peanut butter, almond meal and honey in a medium sized bowl and stir until combined. Roll into tablespoon sized balls, place on a parchment lined dish and refrigerate for 5-10 minutes.
Place chocolate in a small glass dish and microwave in 30 minute increments until melted and loose/smooth. Use a fork to drizzle the chocolate over the peanut butter balls. Refrigerate until chocolate is set and serve or store in the refrigerator. Makes approximately 15 bite-sized balls.
